This stunning hotel is made up entirely of small buildings set on a ridge high above the Pacific. The cabins and cottages are strung along a rocky-ridged slip of Californian cliff. These recycled-redwood rooms offer total seclusion and nothing but soaring condors, starry nights, breathtaking views and a wood-burning fire for company. The only reason to venture out from your secluded isolation will be to take a soothing treatment in the spa or dine at Sierra Mar. Sierra Mar is a ranch-style restaurant with glorious views of the mountains, cliffs and ocean, with enormous windows to showcase the sights. The acclaimed chef adds new dishes to the menu daily, whipping up Californian fare with some French and Mediterranean influences. Not for kids – this hotel is only open to adults ages 18 and up.
Carmel-by-Sea – which once famously had one Clint Eastwood for a mayor – is a picturesque spot to explore. It has something of European feel, with quaint cottages, continental bistros and lush gold courses. The coastline is rugged and dramatic and beyond it lie some great boutique wineries.
